Baked Potato Soup

I don't know about you but I love a good loaded baked potato. This creamy soup has the same great taste of a loaded baked potato. It is great to slurp down on a cold winter day.


Ingredients:

2/3 cup butter
2/3 cup flour
7 cups of milk or heavy cream
4 lg potatoes (peeled, baked, cubed)
Chives, chopped
12 strips of bacon cooked and crumbled (I used smoked maple flavor)
1 1/4 cup shredded mild cheddar
8 oz sour cream
1 tsp salt
1/2 tsp pepper


- In a large pot melt butter on low heat. Once butter is melted slowly stir in the flour and whisk constantly to create a smoothe roux.
- Stir in milk/heavy cream while continuing to whisk until it thickens.
-Add chives, bacon, salt, pepper and sour cream
-Simmer for about 10 minutes and then add potatoes and cheese and simmer for another 10 minutes or until cheese is melted and serve.
